1.5 - 2kg American style pork ribs (approx. 2 racks)
Sauce
1 cup tomato sauce
1/2 cup brown sugar, firmly packed
2 cloves garlic, finely chopped, crushed or grated
2 tablespoons worcestershire sauce
1 tablespoon apple cider vinegar
2 teaspoons smoked paprika
Combine all the sauce ingredients and set aside.
Fill a large stock pot with water and salt. Add the pork ribs and bring it to the boil and cover with the lid.
Once boiling, reduce to a medium or low heat just so the water is simmering. A layer of scum will rise to the top. You can remove it as it simmers if you like, but it's not necessary.
Simmer for approximately 40 minutes. Once cooked, drain the water and set aside the ribs in a large casserole dish.
Using a pastry brush cover the ribs with about 1/4 of the sauce so that they are well covered. Cover and set aside until you are ready to cook on the BBQ.
Preheat your BBQ to very hot.
Add the rack of ribs to an oiled BBQ. Cook on grill (not the plate).
Once sauce has caramelised turn and baste the ribs. Continue turning and basting using all of the sauce. Allow the flame to flare so that you get some good caramelised bits on the ribs.
Once all the sauce has been used and the ribs are looking caramelised and delicious, remove the ribs from the BBQ and set aside.
Cut the ribs into serving-sized portions and dig in.
I love to serve this with some sweet potato wedges, corn on the cob and a lovely fresh slaw with plenty of herbs.
