Serves 4-6
1/2 kg turkey mince
1/2 kg lean beef mince
1 onion, finely diced
1 clove garlic, chopped finely
1 large carrot, peeled and grated
1/2 cup stuffing mix or plain breadcrumbs
1/2 cup relish or pickles
1 egg
2 Tablespoons mustard (any type)
2 Tablespoons Worcestershire sauce
Salt
Pepper
1 clove garlic, finely chopped
1/2 cup tomato sauce
1/4 cup brown sugar
1 Tablespoon vinegar
Preheat oven to 200 degrees celsius.
Combine all ingredients into a large mixing bowl. Mix until the mince is soft and sticky.
Line a baking tray with baking paper. Tip the meatloaf mixture onto the baking tray and work the mince into a rectangular loaf shape squeezing it as you go to remove any air pockets.
Using a pastry brush, baste the meatloaf with some of the basting sauce, making sure it’s fully covered with the sauce.
Cook the meatloaf in the oven for a total of 1 hour and 30 minutes, basting every 15 minutes after the first 30 minutes. That is, cook the meatloaf for 30 minutes, then using a pastry brush baste the meatloaf at 30 minutes, 45 minutes, 1 hour and 1 hour and 15 minutes. Remove the meatloaf from the oven after 1 hour and 30 minutes.
Serve with mash potato and steamed vegetables.
