50 grams butter
1 big tablespoon fruit jam (strawberry, apricot, marmalade)
2 cups rolled oats
Pinch salt
2 cups nuts & seeds (your choice - I tend to lean towards natural almonds, macadamia, hazelnuts, walnuts, pecans, pepita seeds, sunflower seeds, sesame seeds)
1/4 - 1/3 cup dried fruit (your choice - I love craisins, apricots, apple, ginger, sultanas, dates, prunes - whatever I have in the cupboard)
A dollop of yoghurt
Swirl of honey (maybe a teaspoon)
Fresh fruit
Preheat oven to 180 degrees.
Line your tray with baking paper.
Melt butter and jam in the microwave for 20 seconds or on the stovetop. Try not to boil.
Add to the baking tray oats, salt and nuts & seeds and give it a good mix. Don't add the dried fruit at this stage.
Add the melted butter/jam mixture and give it a good mix with a spoon or your hands.
Place in the oven for 10 minutes.
At 10 minutes take out of the oven and give it a good stir and move and bury the toasted nuts at the bottom and cover with oats.
Put the tray back in the oven for another 7-10 minutes. Watch carefully and if getting too toasted remove from the oven.
Once done remove from the oven and allow to cool. The mixture will crisp up as it cools.
Once the granola has cooled add the dried fruit.
Serve with a dollop of your favourite yoghurt and a swirl of honey.
