1 1/2 cups self raising flour (you can use wholemeal flour)
1/2 cup brown sugar
Pinch of salt
3/4 cup milk
3/4 cup vegetable oil
1 egg
1 teaspoon vanilla
1. Preheat oven to 180 degrees. Grease a 12-hole Muffin tin.
2. In a bowl add the wet ingredients, milk, oil, vanilla & egg. Whisk.
3. In a separate bowl combine the flour, sugar and salt and mix well.
4. To the dry ingredients add your choice of flavourings. My favs are:
1/2 cup finely diced strawberries and 1/4 cup dark chocolate chips.
1/2 cup raspberries and 1/4 cup white chocolate chips.
1/4 cup honey and 1/2 teaspoon cinnamon and/or 1/4 cup macadamia nuts
1/3 cup carrot, 1/3 cup chopped walnuts, 1/2 teaspoon cinnamon
1/2 cup finely diced apple and 1/2 teaspoon cinnamon.
1/4 cup warmed marmalade and 1 teaspoon poppy seeds.
1/2 cup banana, 1/4 cup milk chocolate chips and 1/2 teaspoon of cinnamon.
5. Add the wet ingredients to the dry ingredients and mix only until just combined and no more. Do not overmix the batter.
6. Pour the muffin batter into the muffin tin.
7. If you want to get fancy add a little topper such as:
1/4 cup pepita seeds tossed with 1 tablespoon of maple syrup
1/4 cup walnuts tossed with 1 tablespoon of honey
1/4 cup oats tossed with a pinch of oats and tossed with 1 tablespoon of honey.
8. Bake for 20-25 minutes until just cooked. When you press the top of the muffin it should just bounce back. Don't forget they'll continue to cook when you take them out of the oven.
Enjoy a muffin with hot with a cup of tea or coffee.
