360 grams butter (salted or unsalted)
2/3 cup castor sugar
1 tin (250 ml, 395 grams) Sweetened condensed milk
3 cups Self Raising Flour
500 grams chocolate chips (white, milk and/or dark)
Preheat oven to 180 degrees.
Cream the butter and sugar until very light and fluffy.
Beat in condensed milk.
Add flour 1 cup at a time.
Mix on low speed until smooth.
Stir in chocolate chips.
Spoon 1/4 mixture as a log onto plastic wrap and roll into logs until stiff. Roll and twist ends. Place in fridge or freezer until ready to cook. You can bake from frozen dough. You don't need to wait until it's thawed. They may just take a few more minutes to cook.
Remove roll from plastic wrap and slice the log about 1cm-ish thick.
Bake in oven for 12-15 minutes until brown. The bottom may brown more quickly than the top. This is fine.
Leave on tray to cool and firm. The cookies should be crispy and crunchy not chewy.
You can halve the recipe. That way you'll only use half the tin of condensed milk and you can eat the rest.
These cookies are great for bake sales, cake stalls or put in small gift bags and give them away.
