Serves 4
2 tablespoons olive oil
1 tablespoon rosemary, finely chopped
2 garlic cloves, finely chopped
1 teaspoon salt
1 tablespoon balsamic vinegar or glaze
500 grams new potatoes, quartered
2-3 bunches asparagus, woody ends removed
4 x 120 grams salmon fillets (skin on or off)
Preheat the oven to 200ºC
Line a large baking tray
Place the olive oil, garlic & salt in a 2 litre casserole dish or mixing boil. Combine well.
Cook Potatoes - bake for 20 minutes at 200ºC.
Throw in the prepared potatoes into the casserole dish and toss in the oil mixture until all the potatoes are coated. Spoon them into the baking tray leaving some of the garlic, rosemary mixture behind in the mixing bowl. Bake for 20 minutes. Then add Asparagus.
Cook Asparagus - bake for 5 minutes
Throw the asparagus in the mixing bowl/casserole dish add a little extra olive oil and salt if needed and a good slurp of balsamic vinegar. Toss the asparagus in the in the oil mixture until the asparagus is well coated. Add the Asparagus to the baking tray.
Cook for 5 minutes. Once the Asparagus has cooked for 5 minutes, push the asparagus to one side and add the salmon.
Cook Salmon - bake for between 5 - 10 minutes
Throw the salmon into the mixing bowl/casserole dish and toss in the oil mixture until the salmon is coated with the remaining garlic, rosemary & vinegar. You can add a little extra salt and olive oil if needed.
To serve add some black pepper and a lemon wedge.
