Serves 6
2 tablespoons olive oil
2 medium brown onions, finely diced
1 large carrot or 2 small carrots, peeled and diced
2 celery sticks, diced
2 small zucchini, diced
1 head broccoli. florets cut from stalk and cut finely
1/2 bunch kale, cut finely or 125 grams frozen
spinach
200 grams diced ham
500 grams smokey bacon bones
4-5 cups chicken stock
200 grams green beans, cut finely
1 tin diced tomato, drained of juice, pulp only
1 tin cannellini beans, washed
250 grams dried pasta (cooked in salty water according to the packet instructions less 2 minutes).
To Serve: parmesan and chopped parsley
Optional: you could also add a finely chopped medium potato, peas, fresh tomato
Add the olive oil and once hot add onion, carrot and celery. Cook until softened and slightly caramelised.
Add zucchini, broccoli and kale or spinach and diced ham. Mix well.
Add bacon bones and chicken stock. Cook for about 40 minutes or until the meat on the bacon bones is softened.
Remove the bacon bones from the soup and set aside to cool.
Add the tomato pulp and cannellini beans to the soup.
Remove the meat from the bacon bones. Add the meat the soup. Discard the bones.
Cook pasta (macaroni, shells, spirals) in salty water according to the packet instructions, less 2 minutes.
Once cooked, drain and pour a little olive oil and mix well so that pasta does not stick together.
Allow to cool.
To serve add a little pasta to a bow and a couple of ladles of the soup. Top with a little parmesan
cheese and finely chopped parsley.
