Perfect sweet treat! Its a one bowl, one measuring cup, dairy free, super easy banana bread!
1/2 cup coconut oil, melted (120 mls)
1/2 cup brown sugar
2 eggs
1 teaspoon vanilla
250 grams mashed banana, approx 3 bananas
1 1/2 cups plain wholemeal flour
1 teaspoon baking powder
1/2 teaspoon salt
Preheat oven to 180 degrees. Line loaf tin with baking paper.
Melt coconut in microwave or on stove top and add the brown sugar. Allow mixture to cool.
Add eggs, vanilla and mashed banana. Mix to combine.
Add flour, baking powder and salt. Mix until well combined.
Pour into the prepared tin and bake for 35-40 minutes.
Store in an air-tight container. It will keep in the fridge for a few days. You can freeze and defrost as needed or for lunch boxes or late night snacks. We love toasting it on the stove top, in pan. Then topping it with lots of butter or berries, whipped cream and maple syrup. Yum!!
